Chilli tomato buratta pasta

This is such a delicious dish, it’s fresh and warming all at the same time and there’s an explosion of flavour with each bite. It’s a great meal for vitamin A from the tomatoes, vitamin b6 and c from garlic, protein from your parmesan and there’s around 8g of protein in half a burrata and of course pasta is one of the most delicious fuel sources for your body.
Ingredients for two:
Sundried or sun soaked tomatoes - in oil - A third of a jar of the tomatoes

Olive oil
Tomato puree - 2/3 of the tube
Garlic - 5-6 cloves
Mint - a third of a smaller bunch
Parmesan - as much as you like
Chilli flakes - I use two generous
teaspoons
Pasta - I cooked for two
Burrata - Half a burrata per person
Method:
1. Pop your pasta on.
2. Add garlic, oil from the sun dried tomatoes into the pan alongside chopped sundried tomatoes and a bit more oil, chilli flakes and a bit of pasta water. Stir together and salt to taste.
4. Grate in a generous portion of parmesan and stir in.
5. Chop your mint finely and add in about 3 minutes towards the end.
6. Throw your cooked pasta into the pan
7. Top with your burrata and oil and mint leaf to garnish.
This comes together in less than 20 minutes and is such a delicious dinner.
