Elevated Beans on Toast
Five bean mix in a rich tomato base, sourdough, yoghurt, guac, a bit of cheese on top.

The bonus: that bean mix is loaded with fibre and plant protein which most of us don't get enough in a day, and this plate helps close that gap. Slow-release energy, keeps you full, tastes incredible.
Here's the full recipe:
A whole pack of beans serves 2 but this recipe is for 1 - use the whole pack and double the rest of the recipe.
Ingredients
- 1/2 Pack of Merchant Gourmet 5 bean mix - or make your own/ use a generic brand (120g whatever you use).
-50g Sourdough
- Guac or avo 38g
- Greek yoghurt 50g
- Reduced fat cheddar cheese 30g
- Tomato puree 15g
- Ole El Paso Smoked Fajita Seasoning Mix 4.5g
Method
1. Add your beans to a pan and add in your tomato puree and fajita seasoning. Add a drop of water if you need.
2. Cook until the pan is sizzling nicely but stir as it goes.
3. Put your toast on.
4. Grate your cheese, make your smashed avo if you're making it.
5. Plate up - sourdough, beans, guac, dollop of yoghurt and cheese
